My absolute favorite pie in the entire universe is Apple Crumb Pie (can you tell I've been reading Charlie and Lola books to the girls?). It's a recipe passed along from Lee's side of the family. It is the one dish I absolutely look forward to every Thanksgiving and Christmas. 

Obviously, I'm in cooking mode.

Here's the recipe for Apple Crumb Pie:

4 large tart apples
1/2 recipe pie crust 
1/2 cup sugar
1 tsp cinnamon

1/2 cup sugar
3/4 cup flour
1/3 cup butter

1.  Pare apples and cut into 1/8ths.
2.  Arrange in 9 inch pie crust.
3.  Combine 1/2 cup sugar and cinnamon.
4.  Sprinkle sugar and cinnamon over apples.
5.  Throw the remaining 1/2 cup sugar and flour into a bowl.
6.  Cut in the butter until crumbly.  Use a pastry cutter or two knives, criss-crossing.
7.  Sprinkle this crumbly goodness over the apples.
8.  Bake at 450F degrees for 10 min.  Then turn down the heat to 350F degrees - we don't want to crisp the apples - for 40 minutes or until the apples are tender.
