On Backyard Camping and S'mores

We had such a fun weekend! 

After sleeping in a bit, making Skype phone calls to friends and family, and having some baked oatmeal for breakfast, we pitched a tent in the backyard and let the girls play in it for the day.

When the sun went down, we started a fire on our grill using wood to serve as our campfire for roasting homemade marshmallows.  Yes.  I said marshmallows.  Did you even know you could make your own marshmallows?  I didn't!

We slapped the hot marshmallow onto some Marie Gold biscuits, a Dairy Milk chocolate, and another Marie Gold on top.  Yum!

After the s'mores, we had a sing along while Daddy played the guitar (and let the girls string a few times).

When it was bedtime, we moved the tent into the girls' bedroom and let them sleep in it.  

That's what memories are made of, y'all!

Make Your Own Marshmallows

  • 2 cups sugar
  • 3 tablespoons unflavored gelatin
  • 1/8 teaspoon salt
  • 1 cup water
  • 1 teaspoon vanilla
Combine the sugar, gelatin, and salt.  Stir in the water.  Heat in a saucepan until the sugar is completely dissolved, then bring it just to a boil.  Remove from heat and cool for about 5 minutes.  Stir in vanilla.  Beat at high speed with a mixer for 10 minutes.  Pour into a buttered 9x13 pan and cool in the fridge.

Get a cup of hot water and dip your fingers and some kitchen scissors into the water before you do the next step.  Cut the marshmallows into 1 inch-ish squares and then roll in the coating (one part cornstarch mixed with two parts powdered sugar).
