On the Garden and a Taco Salad Recipe

This is a tomato from the garden in our backyard.  A little green maybe, but a tomato nonetheless.  And I'm very excited!!!  One reason for my excitement: the.monkeys.didn'  

This year we also have eggplant in the garden.  We have yet to see any of it though because the monkeys keep getting to it before it's ready. 

We've also got our beloved spinach - and tons of it!  We eat a lot of spinach salads to say the least.  I made a taco salad last week that was delicious.

Here's the recipe (if you can even call it that):
  • Spinach leaves, fresh
  • Tomatoes, diced
  • Onions, grilled
  • Green pepper, grilled 
  • Lamb meat, ground, seasoned with taco seasoning (I used Jessica's recipe), and browned (a substitute for beef {shhhh!  Cows are considered holy here.})
  • Homemade salsa
  • Yogurt, plain (a substitute for sour cream)
Top your spinach leaves with the tomatoes, grilled onions and peppers, and meat.  Spoon on the salsa and yogurt.  Consume.

My husband raved about this for hours days after we ate it.

You could probably even slice up some tortillas, bake them in the oven until crisp and serve on top of the salad as well to give it a crunch.  Sounds good to me
